Enjoy this vegan coconut pudding and suit it to your taste buds and dietary plan. Add carob powder for a “chocolate” like pudding. You can also keep this sugar free by using allulose or monk fruit and topping with our unsweetened carob chips.
Ingredients

1 1/2 cups coconut milk

3 tbsp coconut sugar or sweetener of choice
2-3 tbsp organic corn starch (less for thinner pudding and more if you like a “jello” like consistency or would like to eat while warm.)

1 tsp vanilla

½ cup carob chips

1 tsp coconut oil

VEGAN COCONUT CAROB PUDDING
Add coconut milk, coconut sugar, and cornstarch to a small saucepan and whisk all the lumps out. Heat it over medium-high heat, whisking constantly. Bring it to a simmer and turn the heat down to medium-low.
Continue cooking on medium-low heat for approximately 5 minutes, until the coconut pudding starts to thicken. It will start steaming right before it’s done.
When thickened, remove from heat, stir in vanilla, and pour into small ramekins or bowls at about 1/2 cup per person. Chill for at least 1 hour in the fridge.
When the pudding is chilled melt the carob chips and coconut oil in a microwave safe dish, stirring every 15 seconds until smooth and creamy. Don’t overheat, because it burns easily and thickens up.
Top the pudding with the melted carob and let harden in the fridge for a few minutes.
Top with shredded coconut and sliced fruit if desired. Enjoy and save any leftovers in the fridge for up to 5 days.
Recipe Note
- Add 2 Tbsp of carob powder to the pudding before heating for a “chocolate” like pudding.
- You can sub arrowroot or tapioca starch for the corn starch, the consistency will change though. It is also best eaten warm if you use one of these alternatives.
- If you don’t want to melt the carob chips you can alternatively sprinkle them on top of your cooled pudding.
- Corn is a highly genetically modified food, so be sure to use organic corn starch.
