Would you like a simple, delicious treat that is free of refined sugars, unhealthy oils, and artificial flavors? Oh! I forgot to mention, it also tastes amazing! Your nuts or seeds of choice are mixed into a homemade caramel and then dipped into melted carob. Need I say more? Please make these and try to share them, if you can.

Ingredients

1 cup coconut sugar or sucanat
½ cup heavy whipping cream
2 tbsp butter

1 tsp vanilla extract
2 cups nuts of choice

2 cups carob chips
Coarse or flakey sea salt (optional)

CAROB CARAMEL NUT CLUSTERS
Line a large baking sheet with parchment paper or a silicone mat.
Add coconut sugar, heavy whipping cream, and butter to a thick bottomed saucepan over medium heat. Stir occasionally as it melts and comes together. Bring to a boil and stir continuously until slightly thickened, about 5-10 mins or 230F on a candy thermometer. If you don’t keep stirring, the bottom will burn.
Remove from heat and stir in the vanilla and then the nuts.
Drop tablespoonfuls of the mixture onto prepared baking sheet. Place in the freezer for 20 minutes.
When 20 mins is nearly up, melt the carob in a medium, microwave-safe bowl on high, stirring every 20 seconds, until melted, about 2 minutes total.
Remove caramels from the freezer and dip in melted carob, using a fork to flip and coat. Return to baking sheet, sprinkle with sea salt and transfer to the refrigerator to chill until firm.
