Who doesn’t love a good ice cream bar?! The trouble is all of the added artificial ingredients and loads of refined sugar. Try this simple ice cream bar recipe and make your own at home and dip them in our crave worthy carob.
Ingredients
2 cups heavy cream
1 cup whole milk
½ cup sour cream

¼ - ½ cup maple syrup or allulose (depending on how sweet you like your desserts)

1 tsp vanilla

Pinch of sea salt

1-2 cups of carob chips

1-2 tsps coconut oil

Directions
CAROB DIPPED ICE CREAM BARS
Mix all ingredients together with a whisk or in a blender until smooth and no lumps remain.
Pour into your popsicle molds, add popsicle sticks, and let freeze for at least 3 hours or more until solid.
When bars are frozen, prepare your carob coating. You can melt your carob chips in a microwave safe jar or cup with the coconut oil, stirring every 30 seconds until smooth and melted. You can also use the double boiler method below in the notes. 1 cup of carob chips might be enough to coat the bars, but you will need to tip your cup more to make sure the bars are coated.
Line a baking sheet with parchment paper or a silicone mat. Make sure your carob has cooled down so that it isn’t hot and won’t immediately melt your bars. Dip your frozen ice cream bars in the carob and place them on your prepared tray. Immediately put back in the freezer for at least 30 mins or more.
Enjoy and wrap leftovers in plastic wrap or parchment paper and store in a freezer bag in the freezer.
Recipe Note
- You can make these vegan by subbing the dairy for coconut cream, non dairy milk, and non dairy yogurt.
- If you do not have popsicle molds you can try putting them in flexible cups and adding popsicle sticks when starting to freeze.
- You might need to run cool water over the bottom of the molds to get the bars out.
Double Boiler Method
- Place carob and coconut oil in a heat proof bowl over a pot of simmering water. Don’t let the bowl touch the water. You want the steam to melt the carob. Stir as it melts and remove from the stove when completely smooth.
