½ cup carob chips of choice
CAROB POPCORN BARS
Directions
CAROB POPCORN BARS
Prepare a loaf pan with a large piece of parchment paper that folds over the sides.
Pop the popcorn, preferably with an air popper.
In a small saucepan, heat the allulose over medium heat until it boils (about 2-3 minutes). Once it boils stir it for another minute and then remove from heat. Let it cool slightly.
Place the popped popcorn in a large bowl. Slowly drizzle the hot syrup over the popcorn while gently stirring to evenly coat. Sprinkle with a few pinches of sea salt. You can add the carob chips into the mix or melt them for the top.
Pour the popcorn into the prepared loaf pan. Pack it down with a wooden spoon as much as you can. You can also fold over the sides of the parchment paper on top of the popcorn and press down with your hands. Make sure it isn’t too hot before doing this. Let cool completely.
While popcorn cools, melt your carob chips if you didn’t mix them in. Add the carob chips to a heat safe cup or bowl and microwave in 15 second intervals, stirring each time. Do this until smooth and melted. Be careful not to overheat your carob.
Pour melted carob over the top of the popcorn and spread evenly. Let carob harden completely and cut into 8-10 pieces.
Store any leftovers in a sealed container in the fridge. Enjoy!
