Ready for a super easy, cool, and refreshing treat that will help you beat the heat this summer?! This ice cream recipe doesn’t even require an ice cream maker and you can use the sweetener of your choice. All you need is a few simple ingredients, a blender or mixer, some carob chips of course, and some patience as you wait for your ice cream to freeze.

Ingredients
4 cups cream

½ cup maple syrup or sweetener of choice

2 tsps vanilla

¼ tsp sea salt

½ cup carob chips
½ -1 cup half and half or whole milk (optional if you don’t want your ice cream too rich)

Add cream, maple syrup, vanilla, and sea salt to a blender, stand mixer, or bowl with a hand mixer. Mix until thick and creamy, but not as stiff as whip cream.
Pour into a freezer safe container and mix in the carob chips.
If you don’t want your ice cream too rich, pour a little half and half or whole milk, ¼ cup at a time, into your mixture. Gently mix until combined. You can taste it to see if you want to add more.
Place in the freezer for 2-4 hrs, then scoop and enjoy!
Recipe Note
If you have leftovers, cover with a lid or plastic wrap and save in the freezer.
If it has been in the freezer for a while, bring it onto the counter about 5-10 mins before you dish it out.
