Start your day with a crunch! Missy J's Carob Chip Granola recipe is the ultimate breakfast treat that will leave you wanting more. Made with hearty oats, nutty pecans, and crunchy almonds, this granola is sweetened with our crave-worthy Australian carob, making it a truly unforgettable experience. One bite and you'll be hooked!
Ingredients
1/4 cup chia seeds
1/4 cup water

2 cups rolled oats

1/3 cup chopped pecans

1/3 cup slivered almonds
1/3 cup pumpkin seeds
1 tbsp cinnamon

1 tsp sea salt

1/4 cup softened coconut oil
1/3 cup honey

1 tsp vanilla

1/2 cup carob chips
1/2 cup dried or toasted coconut flakes

Directions
Carob Chip Granola
Preheat oven to 300°F and prepare a large baking sheet with parchment paper.
Mix the 1/4 cup chia seeds and 1/4 cup water together in a small bowl and set aside to gel up.
In a large separate bowl, mix the oats, pecans, almonds, pumpkin seeds, cinnamon, and sea salt together.
In a separate medium bowl, mix softened coconut oil, honey, vanilla, and the chia seeds mixture together and then add to oat and seed mixture.
Spread on the prepared baking sheet in a single layer.
Bake in the center of the oven for 60-80 minutes; stirring every 10-15 minutes, to prevent burning.
When granola is a nice golden color and sounds crispy when you stir it around the pan, remove from the oven and let it cool for at least 30 minutes.
Add the carob chips and coconut flakes to cooled granola and stir to combine.
Enjoy with your milk of choice, as a topper for a bowl of yogurt or chia seed pudding, or simply have a handful as a snack.
Notes:
In place of the 1/3 cup almonds, 1/3 pumpkin seeds, and 1/3 pecans you can use any combination of seeds and nuts that you like, up to 1 cup total.
When the granola has finished baking you can add in dried fruits of your choice as desired.
