Frozen Carob Banana Bites
Directions
Frozen Carob Banana Bites
Slice bananas into 1/4 or 1/2 inch thick bite sized pieces.
Place banana bites on a parchment or silicone lined baking sheet, leaving space between them, and freeze for at least 2 hours or until frozen solid*
When your bananas are frozen, melt carob chips and coconut oil in a small heat proof bowl, using a double boiler or in a microwave.
Remove the frozen bananas from the freezer and place them next to the bowl of carob on a counter or table. Put 2-3 banana bites at a time, in the bowl of melted carob and stir to cover. Be careful not to let them touch or they will stick together. Lift each banana bite out one at a time with a slotted spoon or fork, letting the excess carob drip back in the bowl. Place back on your baking sheet and repeat this process with all of your bananas.
Return the bananas to the freezer for 30 minutes to 1 hour.
If you have any extra melted carob you can stir in some nuts, seeds, or dried fruit and pour it into a parchment line container and stick it into the fridge to harden. Keep whole or cut into pieces.
Keep banana bites in an airtight container in the freezer for when you want a healthy sweet treat.
Note: *It is recommended to freeze them the day before you want them so they have plenty of time to freeze.
