Introducing Peanut Butter & Oats Carob Cookies, a delightful treat that combines the classic flavors of peanut butter, oats, and our rich, crave-worthy carob. These cookies are packed with wholesome ingredients and are sure to satisfy your sweet cravings.
Ingredients
1/2 cup butter

1 ½ cups coconut sugar

1 tsp vanilla
4 large eggs

1 cub carob powder
1 18 oz jar chunky peanut butter (approximately 2 cups)*

6 cups oats (quick or old fashioned)

1 heaping cup of carob chips

2 ½ tsp baking soda
Note: *If you don’t have chunky peanut butter you can replace 2-4 oz of the peanut butter with chopped nuts of your choice.
You can also use a combo of nut butters or completely sub the peanut butter for a nut butter you prefer. Just make sure your nut butter has a similar consistency to peanut butter or it might change the recipe results.

PB & Oat Carob Cookies
Preheat oven to 350°F and line 2 baking sheets with parchment paper.
In a large bowl, beat butter and coconut sugar together until creamy.
Blend in vanilla and eggs.
Blend in carob powder and peanut butter.
Mix in oats, carob chips, and baking soda; mix well.
Measure dough into 1/4 cup amounts and place 4 inches apart. Flatten to 2 1/2” in diameter, leaving around an inch of space between cookies.
Bake at 350°F for 10-12 minutes. They will puff up and be crisp looking around the edges when they are done.
Let cool for 1-2 minutes on baking sheet and then let cool completely on wire rack. Cookies will appear unstable at first.
