Savor the sheer delight of our Fruitful Ice Cream recipe: a velvety blend of frozen bananas, luscious fruits, and a touch of our Carob Hard Shell Topping magic!
Ingredients
1/4 cup milk or water plus more if needed
2 frozen bananas
16oz of frozen fruit of choice (strawberries, mixed berries, mixed tropical fruit, mango etc.)

1/2 cup coconut oil

1/2 cup carob powder

Directions
Fruitful Ice Cream
Place all ingredients in blender or food processor and blend until smooth and creamy. If it is not blending up, stop your machine and push down the fruit with a tamper or long spoon. Once the lid is in place again, continue blending.
Scoop into a dish and enjoy; perhaps you might even share. Top with our Carob Hard Shell Topping recipe found below. You can also melt carob chips and drizzle it on top of your fruit ice cream and it will harden.
Notes:
If you do not own a high powered blender you might need to add a little more milk or water to achieve a smooth consistency. If your ice cream turns out too soft you can put it in the freezer for 1-3 hrs until it hardens to your liking.
Store any leftovers in an airtight container in the freezer. Remove from freezer to soften at least 10 minutes before serving.
Carob Hard Shell Topping
Heat coconut oil in microwave or on the stove, just until melted, do not overheat.
Mix carob powder into the coconut oil and stir until combined.
Pour over fruitful ice cream and watch it “magically” harden.
Store any leftovers in a small container in the fridge. Warm it up to a pourable consistency when ready to use it again.
