"I’m always looking for a healthy, plant-based, and of course delicious new snack or baking product that uses clean ingredients. Walking down the aisles of Whole Foods, I noticed Missy J’s Carob Chips on the shelf. I wasn’t super familiar with carob, but I saw that these carob chips contain no caffeine, gluten, or dairy, and are sweetened with coconut sugar. So, this was a dream purchase for me. I like that carob contains no stimulants, as opposed to chocolate. But specifically, I use Missy J’s brand of carob because of the simple and clean ingredients used, as well as the delicious taste. In my skillet cookie cake, I melted some carob chips in the microwave, then drizzled them over a slice and it was YUMMY. "

Ingredients

1. 1/3 cup peanut butter
2. 1/4 cup applesauce
3. 1/3 cup maple syrup 
4. 1 tsp vanilla extract
5. 1 cup gluten-free flour (I recommend oat flour)
6. 1/4 tsp baking soda
7. 1/2 tsp baking powder
8. pinch of salt
9. 1/4 cup Missy J’s carob chips
10. 1 tbsp ground flax seeds (optional)

Directions

Preheat oven to 350 degrees F and grease a cast iron skillet with baking spray. Whisk together peanut butter, applesauce, maple syrup, and vanilla extract. Sift in flour, baking powder, baking soda, optional flax seeds, and salt. Fold in the carob chips. Bake for 25 to 30 minutes.
