Indulge in the rich, wholesome goodness of these Divine Carob Wafer Delights. A delicious blend of carob and coconut sugar, these wafers are a guilt-free pleasure perfect for any occasion.

Carob Wafer Delights
In a large mixing bowl, cream together the butter, sugar and extracts until light and fluffy, about 2 minutes. Meanwhile, in a separate medium bowl, whisk together the flour, carob powder, baking soda and sea salt.
Add the dry ingredients to the butter mixture and stir until incorporated. Pour in the milk and mix until just combined.
Transfer the dough to a clean workspace and form into a rectangle or disc no more than 1/2 an inch thick. Wrap tightly with plastic wrap or place in a container and refrigerate for at least 1 hour.
When ready to bake, preheat the oven to 350 degrees F and line two baking sheets with parchment paper or a silicone mat. Roll the dough out to about ⅛-inch thick working with half of the dough at a time, keeping the rest in the fridge until ready to roll and bake. Cut out the cookies using a round cookie cutter or the top of a glass jar.
Recipe Note
- These should keep for 3-4 days on the counter and over a week in the fridge. Or freeze them to last for months.
- This recipe can easily be made vegan by substituting the butter for coconut oil and using a non dairy milk.
- Enjoy them plain, dunked in milk, with your favorite ice cream sandwiched in between 2 cookies, or get creative and craft a luxurious Carob Delight Ice Box Cake.
