3 large over ripe bananas
¼ cup melted coconut oil
2 cups gluten free rolled oats
2 eggs or egg substitute (chia/flax egg)
1 tsp. baking soda
1/4 cup liquid allulose. (I use Wholesome brand- Amazon)
1 tsp monk fruit drops. (I use illinea monk fruit-Amazon
1/4 cup Missy J's Carob chips (plus 1-2 tbsp for topping)
1/4 cup Missy J's Unsweetened Carob chips
Preheat oven to 350 F.
Grease loaf pan or line with parchment paper "sling".
Mix all ingredients in a blender or food processor till the batter is smooth.
Fold in the carob chips.
Pour batter into the greased or lined loaf pan.
Top with Carob chips.
Bake for 40-45 minutes till "toothpick clean".
